Creative Use of Leftovers

Cooking with fresh ingredients is one thing, and I was lucky this week that A. I had the time to cook, B. had good ingredients from my veggie basket to work with and C. came up with something good for dinner two nights in a row. But the trick is the leftovers. Just eat them as is for a repeat of a pretty darn good dinner, or come up with something else. Yesterday and today I went with the something else option.

I’m still in the midst of painting (eight days down, about two more to go) so the leftover route was a good option. That and I’m a little sore in multiple areas of my body from said eight days of painting. So leftover dinner one – short rib rolls. I took some onion

I let that simmer for a bit then rolled the mixture, a little at a time, in rice paper – easier than anticipated actually – and came up with dinner. I added a little heated sauce for Bob and short rib rolls it was. Somehow the addition of the onion gave this a great new dimension.

Tonight’s adventure was the pork. I thought about pork tacos, BBQ pork sliders, and a pork salad but none of that sounded appealing. So after seeing what my veggie basket had today I decided on a pork pie.

The savory pie idea came for, the awesome Chicken, Ham and Leek pie Emmie’s friend in England sent over one night the last time we were there. I had never really considered savory pies before, but now I’m slightly obsessed with them. BTW Brad – any chance of getting another pie when we come over next time? Just asking. I still have fond memories of that pie. … Back to the pork pie. I found a recipe for a Quebec pork pie. It had a fancy name and great reviews so I started there. But … never one to follow a recipe, I used the basic cooking technique and not much else.

I chopped two ribs of celery, one carrot, one half of a large onion, two cloves of garlic and the leftover pork from Monday. I tossed all of that into a large skillet (coated with a little butter) one cup of veggie broth, Italian seasoning, pepper and a dash of cinnamon. Stir all together, cover and simmer for about a half hour. In the mean time I made a crust. It’s not pretty, but it worked. I poured the filling into the pie plate, covered with what might pass as a top and popped it in the oven at 400 for about 30 more minutes. Uncovered. It came out looking like this.

The front room (now to be referred to as the library) is looking really, really good. Love the dark brown walls and the new placement of the desk. My huge 302 pound desk. But it works. Still need to paint the bookshelf and get it all back together, but it is looking really, really good. Just our bedroom left and I should be able to do that next week.

Brief Update

I realized that I had not updated since the big cook out. Bob and I happily ate leftovers for a week as I try to get everything together for the last few weeks of work. You would think it would be relatively calm this time of year, but it is busy and hectic making sure everything is in order before files get transferred to new schools, students know where they stand with credits, classes are picked and then changed for next year etc. And since every other school is doing the exact same thing, the program that I would use to do most of this is slower than beating the eggs to 160 degrees over a double boiler. Seriously – seven minutes today to get to the page I needed for one kid.

I found a surprisingly good wine. I think these are from the same winery – Lady in White and Lady in Red. Not expensive in the least, and good with dinner wine. I liked both very much, but I have to say, there is something about the bottles that I just love.

Tigger has been a fussy baby again. He goes through these phases where he throws up his food, so I search for a new food. We are on bag five (or six, I lost count) of new food. I’m trying to find stuff that is good for them – limit the by-product and gluten meal – but the majority of those foods he won’t eat. Most of these, none of them would eat. Gracie was getting skinnier and Tigger was just down right cranky. So I went with a more middle of the road choice:

20130604-212830.jpg Good old Purina. They all swooped in and ate this morning. Maybe Tigger will let me sleep now. Probably not, but at least Gracie won’t loose any more weight. Poor thing is already really, really skinny.

No picture, but I did find an awesome yoga place near me. They changed the schedule for summer, so I can actually make class Monday and Thursday. They also started a Saturday am class so I’m super excited. Two classes in and I think I can already feel my blood pressure drop. Super relaxed atmosphere and the class is a lot like the one I use to take in Jersey. Now if I can just get my balance back.

Animals

Somehow, whenever state testing season rolls around, I think ever test publisher and legislator who thinks these things are a good idea and actually measure what students know and teachers have taught should be forced to spend a year in a middle school. Or a high school but middle schoolers aren’t as good at hiding their anxiety and talk to you about how worried they are. So I have spent the last two weeks gathering materials, easing anxieties, reading scripts and watching students take tests for multiple hours a day. Two weeks in and we are not even close to the end. And my regular job still has to get done, so by the time I get home, I’m exhausted (try watching someone do something for a few hours and do nothing else but watch them, no email, no phone, no Internet, no book, nothing …. See how totally brain dead and exhausted you are) and my nerves are frayed almost to breaking. So there hasn’t been a whole lot of cooking recently, and Bob has been totally wonderful about ordering in or going out. I feel guilty but when you can’t think straight and can’t stand much more, cooking just isn’t realistic. This weekend I did manage to make omelettes with the eggs from the veggie patch.

But even that is closing for the summer so now I have to find a new source of cage free eggs.

With all of this going on, the animals are still a source of joy for me. They have been spending a lot of time in the tree lately, something I was thrilled with, but a little confused by. All three of the babies have been going up there or circling the base of the tree for a few weeks now.

I didn’t get a good picture of Leia there – she jumps down and runs over as soon as she sees me every Ike I try to catch her. But what has gotten the kittens so interested in the tree all of the sudden? Surely the birds can’t be dumb enough to build a nest there … or can they?

Yep, they did. One nest on a branch that the cats can get to. They were smart enough to build it out, but Gracie might be able to get to it given the right motivation. At least I will be entertained as I drink my coffee or wine on the back patio for a while.

One more full week of testing then we start the End of Course Exams so only two to three days a week until Memorial Day weekend. So no food posts for another week or so, but I hope to come up with some really creative things once this is all over.

Spring Finally Arrives

March has been unusually cold in Florida this year. We still have the heat on, I contemplated putting the flannel sheets on the bed and I broke out the “blueberry” winter jacket Val gave me when I first got Jessie. At least my winter clothes, often reserved for our trips north or across the pond, are getting some use.

But the weather has finally started to feel like spring. So much so that Jessie and I have extended our walks yesterday and today. And we ran across a strange sight the other day.

Bob tells me those are seagulls. Seagulls. In our little subdivision. Weird. The Gulf is a good 20 minutes away so I never think of seagulls around here. Sandhill Cranes, yes. Alligators? Sure. But seagulls? Not really. I did stay on the opposite side if the street on this trek – Jessie really wanted to play with them.

Jess has been a little spoiled recently. Mom brought her dinner yesterday.

20130330-182320.jpg in case you can’t read that, it says “Chicken/brown rice/carrots – gravy for Jessie.” Yes, my mother cooked for the dog. Well, she saved leftovers for her. Not for Bob and I, but specifically for Jessie. Can we say spoiled?

I didn’t do much interesting cooking this week. I did some, but nothing recipe worthy. But today, I made a trip out for eggs. … I probably should explain. I like listening to podcasts on my way to and from work and I recently found a new one – Slate’s Table to Farm. (No, I didn’t get that backwards, that is the correct name.) It is pretty interesting – they pick a food, talk to people who source the food – fishers, apple experts, butchers. etc., then pick obtain some of the food, cook and eat it. This sounds weird, and admittedly it is a little odd, but it works. There is a definite slant towards local, sustainable sources of foods from CSAs, farmer’s markets and local butchers, and I can’t say I disagree with that premise. Bob was a little worried about his dinners after the steak episode, but it turns out I had a harder time with the egg episode. Probably because I know where meat comes from and do whatever I can to get meat from smaller sources that treat animals as humanly as possible, but I had never really though about eggs. I’m not sure why, but I just didn’t. After listening to that episode, I told Bob we needed to find local eggs as I am pretty sure I am never buying eggs from the grocery store again.

It turns out, if we are willing to drive a little, there is a local option –Bob’s Veggie Patch I admit it’s a drive, but he does also set up in Bradenton on Wednesdays and the timing works perfectly with my work schedule. I was so excited. We picked up the veggies for the week today too. I was so happy!

After getting our eggs and veggies, we decided to head out to lunch today and we could not have picked a prettier spot.

It’s Beginning to Look a lot Like Christmas

Yes, every year when the tree begins to go up, I use the same song for the title every year. Let’s just call it tradition.

There was a debate about the tree this year, pretty much between me and my little brain. I wanted a tree larger than the little tabletop tree, but I didn’t want to mess with the nine foot artificial one in the attic. So … Bob and I went out Saturday and found a five and a half/six foot tree. Live tree. Yes, I am being brave this year and taking a chance with a live tree, glass ornaments and three cats in the house.

We did keep it fairly simple, Bob got his Star Wars ornament (at least I think it is Star Wars)

I think Cinderella is the better ornament as she does have the best shoes. Bob doesn’t think that is all that important in deciding the cool ornament criteria. I still contend shoes are highly important.

This is the first year we really put a tree up since the first year we were here. We pulled all the ornaments down and started putting them up. Some were from my collection – mostly cats and cute things – a few were Bob’s, and most came from Mom and Dad’s old collection. I had forgotten how many of those were glass, which is very pretty, but maybe a little formal. But interspersed with the others, they look lovely. We also found …

This ornament is older than me, and possibly older than Dad. This came from the box with great grandmom’s ornaments in it. I was reluctant to put any of them up as it is a live tree with cats in the house, but we decided to go for it. We didn’t put a lot of them up, but we did add one or two just because, hey, we have them, why not. (crèche set should be going up this week!)

On the food front, we had Mom and Dad and Aunt Dolly and Amilcar over for lunch and I got to use all the wonderful things from my basket. They included …

A yellow tomato and goat cheese salad with basil and white balsamic vinaigrette. Mom thought this was peppers and mozzarella, and was pleasantly surprised by they flavor. I also experimented with rainbow chard and came up with

This was a total experiment. I toasted pine nuts in sesame oil then tossed the chard with garlic and salt and wilted them down. I added Parmesan cheese and tossed it all together with basil. Dad thought it was good, Mom and Aunt Dolly had seconds and Bob declared it “a definite do again.”. Experiment a success!

One a side pet note, Gracie hated her pretty pink, sparkly bell collar so much she took it off. No clue where it is, she came home one evening with it totally gone. How she managed to get out of a buckled collar, I do not know, but really wish I did.

Silent Night (No More)

After the mouse incident, I was prepared for another mouse or two from Gracie. What I was not prepared for were the rabbits she brought home yesterday and this morning. Logically, this is what cats do – they hunt. But I still feel incredibly bad for everything she chases. So … we are attempting a low tech solution.

Collar with a bell. I went for the pinkest, sparkly-ist, girly-ist collar I could find … With a bell. Gracie hates it. She had hidden under the bed, under the entry table, under the couch and in my closet. I just put it on her after work today. I am hoping she gets accustomed to it and it no longer bothers her, but I get the strange feeling she will either figure out how to take it off, or just stay out for a few days, pouting. Either way, I want to give the small critters of the neighborhood a fighting chance.

On a lighter note, I had help making dinner tonight.

On the First Day of Christmas … (or the Christmas Season)

Happy Holiday Season. We ended Thanksgiving day here with Gracie bringing us the first gift of the season.

That is a very bad picture of a very terrified mouse. Gracie brought home, and into the house, a very alive, very not hurt mouse. This would be bad enough, but once she let go of the mouse, the poor thing ran behind the television.

Shouldn’t be a problem, right? Get the mouse cornered, catch the mouse, take mouse outside and release. No big deal. Except here we had Gracie and Leia trying to catch the mouse before we did, Jessie trying to figure out what al the fuss was about and a mouse that disappeared. Yep. Gone. Can not find. In the house. With two adults, two cats and a dog watching it.

Bob found the mouse … It hid in one of his speakers. So how does one get a mouse out of a speaker? Take the whole thing apart. Bob took the speaker outside, I got the cats inside, and he took the speaker apart only to find the mouse hid itself in the insulation. After poking it with a small bamboo pole it came out and scampered under the grill then up the wall. Cats were safely in the house so they could not recapture it. The speaker however …

Had to be put back together again. We did manage to get everything back together again and in working order …. ok, Bob got everything together again and in working order and I tried not to laugh after it was all over.

It was a full week and a full Saturday this week. Lots going on at work and in Saturday Bob and I went out and about to Art Slam to see some of my kids from work perform. It was a beautiful day and we discovered the Riverwalk area of Bradenton. Neither of us had ever been there before, but I think I found a great place to take Jessie when I want to get her out and to a different place for her to sniff. I was glad we didn’t bring her yesterday because there were so many dogs and people there. Have to try a mid week afternoon when I don’t have I work.

But the show was great. Our Dance department put on a fabulous show – one a few of my kids specifically asked if I would come see, so I dragged Bob out (ok, no dragging was really necessary – I think it is because I limit the school functions I ask him to attend with me) and we had a really good time. The kids did a great job.

Yes, that is pasta and meatballs, but the pasta is quinoa pasta! Ok, it is still a grain, but it is probably better for you than regular wheat, so I’m going with it. I’ve have a spaghetti and meatball craving for a while, so I found that in the grocery and decided to try it. I have to say, the texture is just a little different, but no real noticeable taste difference. It was a nice change from no grain meals and one that I can see making again, although I will really, really limit it. I just have to sit down and look through my cookbooks again for some new inspirations.

The Woodchuck I have had before and it is a good, all around easy to drink cider. It doesn’t floor me, but I would reach for it without hesitation over some others. The Crispin did surprise me. It has a very light/pale color so I thought it would have a very light taste, but I didn’t. It actually tasted pretty much like apple juice, only kinda of fizzy. Good, but the Spire from last week is still in the lead.

Things I’ve Learned This Week

The last few weeks have been a little rough. Not compared to those who have lived through fire, floods, war and famine, but in the every day “this really has to stop” way. I won’t go into the work stuff, but there is a glimmer of light that it is getting back on the right path. One of these days I may even find my desk beneath the piles of papers that amass themselves there every single day.

Gracie and Tigger have taken turns getting sick. I’m pretty sure it is their food, but whenever we get one kind that Tigger doesn’t throw up, Gracie does; when we find a food Gracie can eat, Tigger gets sick. Yes, I have tried having two different kinds out, but somehow, someone always ends up eating the one to make him/her sick, so I am back to square one.

Speaking of the kitties, Gracie decided to be cute this week. Ok she is always cute, but really, this was priceless.

That is her, hiding among my clothes. I think she wanted to get warm as we did have a rather odd cold spell here. I even broke out the boots and lightweight sweaters. The sad part is that at work, I was still freezing.

I finally seem to be kicking whatever weird ailment had me nauseous the last few weeks. After trial and error at the doctor’s they decided that I was, in a very literal sense, motion sick. Yep, motion sick. And while the cure is pretty simple, it did manage to knock me out for a while. And the cider I had with dinner Friday certainly didn’t help. Note to self, no alcohol with meds that make me sleepy.

I love a good cider, much like some enjoy a good beer. I decided to pick up a couple and try them over a few weeks. I had the Oliver that I posted a week or so ago and it was ok, but nothing that I really want to pick up again. Friday’s cider was …

I was rather pleased with this one. It has a very strong apple taste which I like in a cider and except for the slight fizz and a very velvety texture, it could have been just a good apple cider. But it was heavier than non-alcoholic ciders and had a fizz, but not really carbonation. So far, Spire is my favorite, but I still have three more to try before my experiment is done.

For dinner tonight I did a plain old hamburger, but I tried a we side dish – grilled tomatoes with garlic and parmigiana cheese.

It was very pretty smelled fantastic, but there are a few things I really need to do differently. First, rather than half the tomato, I think thick slices will work better. I need to grate the garlic rather then chop it, and I think I need to brush the garlic over the tomato as it grills and not worry about frying it first. A different cheese may also be needed. I am thinking of a nice sheep’s milk cheese. Specifically I am thinking about the cheese we had in Scotland, but I know I will not find that in Florida. (cue dramatic sigh.)

So this week I learned:
1. Yes, it really does get better
2. When it is cold outside, cats become very, very cute
3. If the prescription bottle warns it may cause you to become drowsy, avoid any alcohol
4. Try the recipe, but try changing the recipe too
